If you leave your starter at room temperature on your counter you have to feed it every 24 hours. If this seems like too much of a chore, you can store it in your refrigerator and feed once a week.
To maintain your starter at room temperature it will need to be fed daily. If you didn't use it to bake since it's last feeding, you will need to discard (remove) half of the starter from the jar before you feed it. Feed your starter equal parts of flour to the amount of starter left in the jar (after discarding) and just enough water to maintain a thick pancake batter consistency. I like a 1:1:3/4 ratio of starter/flour/water.
Maintain your starter in the fridge when you don't plan to bake as often. It will need to be fed weekly. Remove your starter from the fridge, feed and let sit at room temperature for a few hours before returning to the fridge. If you plan to bake, you will want to take it out of the fridge the day before putting your dough together. Give it a feed the day before baking and the day of baking.
We only use unbleached bread flour over here, I prefer the brand King Arthur which we get at our local Walmart, but you can usually get away with unbleached all-purpose flour as well.
Spring water! Unless you have a special filter on your tap water, I would buy spring water from the grocery store. We are looking to avoid reverse osmosis and distilled water as the minerals have been stripped from these and are a core building block to the bacteria in sourdough.
Unfortunately, this one is a secret. But you can easily find recipes online.
